White Alba Truffle Pasta Recipe
The white Alba truffle is regarded by some as the single most expensive food ingredient in the world. Its price can reach up to $6000 per pound depending on the day (!). Back in 2014, a 4.16 pound white truffle received a $1 MILLION offer from a private buyer in China. This white/yellowish underground gem is impossible to be grown anywhere else but in certain regions of Italy. You can find white truffle in Oregon and North Africa but they are incomparable to the Italian White Alba Truffle. Luckily for you, White Alba Fresh Truffle is sold by Truffles USA, so you can make this fancy meal anywhere between the 3 months that the mushroom is in season (October-December). The flavor and aroma of this simple plate of pasta are unique. A dish that anybody should try at least once in their lifetime.

- 12oz (350g) Tagliatelle or Pappardelle
- 1 1/2 tbsp salt for pasta water
- 2 fl oz (59 ml) of Heavy whipped cream or Italian Panna
- 3 tbsp of unsalted butter
- 1 tbsp of Extra Virgin Olive Oil
- Salt and Pepper
- Reggiano Parmesan cheese
1- Bring 4-6 quarts of a water to a boil, add salt
2- Cook the pasta AL DENTE
3- Meanwhile, in a pan melt the butter in low heat.
4- Add the Heavy whipped cream along with salt and pepper
5- Grate some fresh White Alba truffle and some Reggiano Parmesan, and gently stir.
6. Remove the pasta from the pot to the pan with cooking tongues
6- Add to the pan with the pasta 2 scoops of the pasta water from the pot and stir well. Sprinkle more fresh White Alba Truffle and Reggiano parmesan according to your likes.
6- Serve individual portions and garnish with shaved White Alba Truffles and Reggiano Parmesan cheese.
